SW recipe: Fruity French toast

Serves 1
Syns per serving 9
Deduct 6 Syns if using the wholemeal bread as a Healthy Extra
Ready in 15 minutes


2 medium eggs

½ level tsp sweetener

¼ tsp ground cinnamon

2 slices wholemeal bread from a small 400g loaf

Low-calorie cooking spray

30g each of fresh strawberries, raspberries, blackberries and blueberries

1 level tbsp runny honey

½ level tsp icing sugar

Fat-free natural Greek yogurt, to serve


1 In a wide, shallow bowl, lightly beat the eggs with the sweetener and cinnamon. Add the bread in a single layer and turn to coat evenly.

2 Spray a large, non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. When hot, add the bread and cook for 1-2 minutes on each side, or until golden brown.

3 Slice the bread diagonally and layer up on a plate. Hull and halve the strawberries, then mix with the rest of the berries and pile onto the plate. Drizzle over the honey, dust with the icing sugar and serve with a dollop of yogurt.
