SW recipe: full Mexican breakfast

Syns per serving – FREE

Ingredients:

2 rashers of back bacon
potato, cooked and cut into chunks
red and yellow peppers
smoked paprika
dried oregano.
1 egg
fresh herbs

Method:

Remove all the fat from the bacon and fry over a medium heat in a little low calorie cooking spray. Add the cooked potato, peppers, smoked paprika and dried oregano. Stir until cooked through.

Crack in an egg, cover and cook to your liking. Top with fresh herbs and serve straight away
