Ready in about 15 minutes
• 400g dried fusilli bucati pasta
• 300g runner beans, trimmed and sliced lengthways
For the pesto:
• 100g fresh coriander
• 4 level tbsp grated fresh parmesan
• 2 level tbsp roughly chopped unsalted roasted cashew nuts
• 2 garlic cloves, crushed
• ¼ tsp dried red chilli flakes
• 1 tsp finely grated unwaxed lemon zest, plus extra to garnish
• 200g quark
• 200ml cooled vegetable stock
• Freshly ground black pepper
1 Cook the pasta according to the packet instructions, then drain and return to the pan. Boil the runner beans for 5-6 minutes, drain and cover to keep warm.
2 Meanwhile, to make the pesto, put all the ingredients in a food processor and blend until fairly smooth (add a splash more stock if it seems too thick).
3 Toss the pesto through the pasta, then divide the pasta and beans between 4 plates. Garnish with the extra lemon zest and serve.
