SW recipe: Galinhada (The Brazilian Paella)

Serves: 4
Ready in about: 45 minutes

Low-calorie cooking spray
600g skinless and boneless chicken thighs, halved
2 large onions, diced
4 garlic cloves, finely chopped
2 red peppers, deseeded and diced
1 tsp saffron threads
2 tsp sweet smoked paprika
250g dried paella rice
400g can chopped tomatoes
650ml hot chicken stock
150g fresh or frozen peas
400g thin-stemmed broccoli
Chopped fresh flat-leaf parsley, to serve


1) Spray a large non-stick frying pan with low-calorie cooking spray and place over a high heat. Season the chicken pieces and brown all over. Remove from the pan and set aside. Turn down the heat to medium, add the onions and garlic and cook for 8 minutes, or until soft.

2) Stir in the peppers, saffron, paprika and rice, and cook for 3-4 minutes, or until the rice looks slightly translucent. Add the chicken, tomatoes and stock and bring to the boil. Reduce the heat to low and simmer for 15 minutes.

3) Stir through the peas, then cover with foil and leave on the heat for 5 minutes. Meanwhile, boil or steam the broccoli for 2-3 minutes and drain. Scatter the galinhada with the parsley and serve with the broccoli.
