SW recipe: Ginger and prawn fried rice

Ingredients:

  • 300g dried long-grain rice
  • low calorie cooking spray
  • 1 large onion, chopped
  • 2 garlic cloves, crushed
  • 4cm piece of root ginger, peeled and finely grated
  • 2 large red chillies, deseeded and thinly sliced
  • 2 large carrots, peeled and cut into matchsticks
  • 175g frozen peas
  • 1 large red pepper, deseeded and cut into thin strips
  • 6 tbsp hot vegetable stock
  • 225g frozen jumbo king prawns, thawed
  • bunch of spring onions, trimmed, half shredded and half finely sliced
  • 2 tbsp soy sauce
  • 2 eggs, lightly beaten

Method:

Cook the rice according to the packet instructions, then drain and set aside.

Meanwhile, spray a large non-stick wok with low calorie cooking spray and add the onion, garlic, ginger and chillies and stir-fry for 2-3 minutes. Add the carrots, peas, pepper and stock and simmer for 5-6 minutes, stirring occasionally.

Add the prawns, cooked rice, shredded spring onions and soy sauce and stir-fry for 1-2 minutes to heat through. Push the rice mixture to one side of the wok, add the eggs and cook until set. Stir the eggs through the rice and serve hot, garnished with the sliced spring onions.
