SW recipe: Ginger and soy salmon

Method:

 

Preheat the grill to medium-high.

Put the 4 large skinless and boneless salmon fillets in a shallow dish. Mix the 6 tbsp dark soy sauce , 2cm piece of root ginger (peeled and finely grated) and 2 level tsp clear honey , pour over the fish and toss to coat well. Put the salmon on the grill rack, season with freshly ground black pepper and grill for 12-15 minutes or until cooked through.

While the salmon is cooking, make the 250g dried rice noodles . Spray a non-stick wok or large frying pan with low calorie cooking spray and place over a medium heat. Add the 2 crushed garlic cloves , 1 cm piece of root ginger (peeled and grated), 1 red chilli (deseeded and finely chopped), half a bunch of spring onions (shredded), 5 tbsp vegetable stock and 2 tbsp dark soy sauce and stir-fry gently for 4-5 minutes.
