SW recipe: Goan pork vindaloo

Serves 4
Ready in about 1/2 hours, plus 2 hours’ marinating time

Ingredients:

2 tsp ground cumin

2 tsp ground coriander

1 tsp ground cinnamon

A pinch of ground cloves

2 tsp black mustard seeds

1onion, chopped

6 garlic cloves, finely chopped

2 tsp finely grated fresh root ginger

2 tbsp cider vinegar

2 tsp Kashmiri chilli powder, or mild chilli powder

2 tsp paprika

2 tsp sea salt

2 tsp turmeric

2 tsp freshly ground black pepper

700g lean pork tenderloin, all visible fat removed, cut into bite-size pieces

Low-calorie cooking spray

500ml chicken or vegetable stock

400g passata

1 swede, peeled and cut into chunks

1 large carrot, peeled and cut into chunks

Coriander springs, to garnish

Lime wedges, to serve

Method:

1 Put the cumin, coriander, cinnamon. cloves and 1 tsp of the mustard seeds in a food processor with the onion, garlic, ginger, vinegar. chilli powder, paprika and 5 tbsp water. Whizz until smooth.

2 Mix together the sea salt, turmeric, black pepper and 2 tbsp of the spice paste, then rub this mixture all over the pork. Put the pork in a plastic food bag, seal and leave in the fridge to marinate for at least 2 hours, or overnight if you have time.

3 Spray a wide, deep pan with low-calorie cooking spray and place over a medium heat. Add the remaining mustarc seeds and stir-fry for about 30 seconds before adding the rest of the spice paste. Stir-fry for 5-6 minutes, or until lightly browned.

4 Add the pork and stir-fry for about 1 minute. Cover, reduce the heat to medium and cook for about 10 minutes, lifting the lid now and then to stir, until lightly browned.

5 Pour in the stock and passata and add the swede and carrot. Stir and bring to the boil. Cover, reduce the heat to low and cook wry gently for about 1 hour, or until the meat is tender. Garnish with coriander sprigs and serve with lime wedges.
