SW recipe: Gravlax

SIMPLE
SERVES 8 READY IN ABOUT 20 MINUTES, PLUS 48 HOURS’ MARINATING TIME

Ingredients:

llb 8oz/681g filleted side of fresh salmon, skin and bones removed

3 tbsp sea salt, coarsely ground

1 level tbsp caster sugar

Freshly ground black pepper

A handful of fresh dill, finely chopped

Lemon wedges and dill sprigs, to garnish

For the mustard and dill sauce:

7oz/198g fat-free natural yogurt

1 level tsp Dijon mustard

2 large handfuls fresh dill, finely chopped

Salt and freshly ground black pepper

Method:

1 First, make sure all the small pin bones have been removed from the salmon by rubbing your fingers up and down it. Remove any bones with tweezers.

2 Place the salmon fillet in a large dish. Mix the sea salt, sugar and black pepper together, then rub over the salmon. Sprinkle over the dill, reserving a small amount for later. Cover the dish with cling film, put a wooden board or a plate on top and weigh down with weights or heavy cans. Place in the fridge for around 48 hours to marinate.

3 Next, remove the salmon from the dish and scrape away the dill and salt mixture. Pat dry with kitchen paper and sprinkle with the remaining dill. Slice the salmon very thinly, on the diagonal, and arrange the slices on serving plates. Garnish with lemon wedges and dill sprigs. 4 Finally, mix together all the ingredients for the sauce and serve alongside the salmon.
