Ingredients:
Low-calorie cooking spray
600g lean lamb leg steaks, visible fat removed, cut into bite-size chunks
2 large onions, sliced
2 garlic cloves, crushed
2 small sprigs fresh rosemary, leaves chopped
2 small cinnamon sticks
1/2 tsp ground allspice
400g can chopped tomatoes
2 tbsp tomato purée
2 carrots, peeled and diced
2 large celery sticks, sliced
600ml Lamb or chicken stock
300g dried orzo pasta
200g green beans, to serve
200g spinach, to serve
50g reduced-fat feta, crumbled
1 tbsp chopped fresh flat-leaf parsley, to serve
Method:
1 Spray a large, non-stick saucepan or shallow, flameproof casserole dish with low-calorie cooking spray and place over a medium-high heat. Add the lamb and cook for 5-6 minutes, or until lightly browned all over. Remove to a plate with a slotted spoon.
2 Spray the pan with a little more low-calorie cooking spray. Add the onions, garlic, rosemary leaves and a splash of water, then cook for 10 minutes, or until the excess water has disappeared and the onions are soft and lightly browned. Stir in the lamb, cinnamon sticks, ground allspice, tomatoes, tomato purée, carrots, celery and stock, bring to a simmer, then cover and cook gently for 15 minutes.
3 Stir in the orzo, then re-cover and simmer for a further 20 minutes, or until the orzo is tender, stirring halfway. Meanwhile, boil the green beans for 3-4 minutes and the spinach in a separate pan for 2-3 minutes. Drain.
4 Discard the cinnamon sticks and evenly sprinkle over the feta and parsley. Divide between 4 plates and serve with the spinach and beans.
