SW recipe: Grilled salmon bites with a ginger soy dip

Ready in 25 minutes, plus cooling and standing

INGREDIENTS

  • 3 tbsp sake (Japanese rice wine)
  • 3 tbsp sherry vinegar
  • 5 tbsp dark soy sauce
  • 1 level tbsp brown sugar
  • 500g salmon fillet (about 2.5cm thick), skinned and cut into bite-sized chunks

For the dipping sauce

  • 5 tbsp dark soy sauce 
  • Juice of 2 limes, plus wedges to serve
  • 1cm piece of root ginger, peeled and grated
  • 2 spring onions, trimmed and finely chopped, plus shredded spring onion to garnish

METHOD

Put the sake, vinegar, soy sauce and sugar into a small pan over a medium heat and simmer for a few minutes until syrupy. Tip into a non-metallic bowl and leave to cool completely. Add the salmon and toss to coat well, then leave somewhere cool for 10 minutes. 

Meanwhile, make the dipping sauce. Whisk the soy sauce and lime juice together and stir in the ginger and spring onions. Cover and leave at room temperature for the flavours to develop. Preheat the grill to medium-high. Put the salmon chunks on the grill pan and grill for 5-7 minutes or until cooked through and just firm to the touch. 

Scatter over the shredded spring onions and serve warm with lime wedges, the dipping sauce and cocktail sticks.
