SW recipe: Ham & egg fry-up

Ingredients

Low-calorie cooking spray

1 onion, sliced

5 portobello mushrooms, thickly sliced

300g spinach

Juice of 1 lemon

Large pinch of ground nutmeg

400g gammon steak, visible fat removed, cut into 4 pieces

4 medium eggs

Method

1 Spray a large, deep, non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Fry the onion for 3-4 minutes until softened, then add the mushrooms and fry for 4-5 minutes, stirring occasionally, until cooked through. Add the spinach in batches until just wilted, then add the lemon juice and nutmeg. Stir to combine and keep warm over a low heat.

2 Spray a large, lidded, non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Add the gammon and fry for 2-3 minutes until the undersides are coloured. Turn over and fry for 30 seconds, then make room for the eggs and crack them into the pan. Cover and cook for 3-4 minutes, or until the whites are just set. Pile the veg on top of the gammon and eggs, add freshly ground black pepper and serve.
