SW recipe: Healthy Waldorf salad

INGREDIENTS:

medium celeriac (about 200g)
Juice of 1 lemon
red-skinned apples
celery sticks, finely sliced
15 g chopped walnuts
level tbsp light mayonnaise
5 tbsp. natural fromage frais
2 tsp. white wine vinegar
1 tsp. Dijon mustard
A pinch of sweetener
Salt and freshly ground black pepper

 

DIRECTIONS:

First make the dressing. Place the mayonnaise, fromage frais, vinegar, mustard and sweetener in a large bowl and mix well. Season to taste and set aside.
Peel the celeriac and cut into matchsticks (you could use a mandolin if you have one). Place the celeriac in a large bowl with the lemon juice and just enough water to cover. Stir well. Core the apples, then slice into matchsticks and add to the celeriac.
Drain the apples and celeriac and add them to the dressing in the bowl, along with the celery. Toss well, season to taste and scatter over the walnuts. Cover and chill until you’re ready to eat.
