1kg new potatoes, halved
500g baby carrots, scrubbed and large ones halved
450g pork loin fillet, visible fat removed
3-4 sprigs of fresh rosemary, leaves chopped
1 red onion, sliced into thin wedges
1 head of broccoli, cut into florets
For the apple sauce:
2 Cox’s or Pink Lady apples, cored and diced
Juice of 1 lemon
1 red chilli, finely chopped
10g fresh flat-leaf parsley, chopped
1 Preheat your oven to 200°C/fan 180°C/gas 6. Boil the potatoes and carrots for 10 minutes until they’re half cooked. Drain, leave the carrots in the colander and transfer the potatoes to a large, shallow, non-stick roasting tin.
2 Rub the pork with the rosemary. Sit the pork in between the potatoes, then nestle the onion wedges and carrots around the potatoes. Roast for 15 minutes, then add the broccoli and return to the oven for a further 20-25 minutes, or until the pork is cooked through.
3 Meanwhile, mix together the apples, lemon juice, chilli and parsley, and season. Slice the pork and serve with the veg and fresh apple sauce.
