SW recipe: Indian-spiced fish curry

Serves 4
Ready in 35 minutes

Ingredients:

Low-calorie cooking spray
2 onions, thinly sliced
1-2 tbsp mild curry powder (to taste)
2 x 400g cans chopped tomatoes
Small pack fresh coriander, roughly chopped
500g skinless and boneless firm white fish fillets, cut into chunks

Method:

Spray a large, lidded non-stick casserole pan with low-calorie cooking spray and place over a medium heat. Add the onions, cover and cook for 8-10 minutes, stirring occasionally.

Sprinkle the curry powder over the onions and cook for 1-2 minutes, stirring. Stir in the tomatoes, half the coriander and 600ml boiling water, reduce the heat to low and simmer for 10 minutes, uncovered. Lightly season the fish and tuck the chunks into the tomato sauce.

Cover and simmer for 10 minutes or until the fish is cooked through. Scatter over the remaining coriander and serve hot.
