SW recipe: Individual Lancashire hotpot

Ingredients:

800g floury potatoes, such as Maris Piper, peeled and thinly sliced

2 medium onions, peeled, halved and sliced

700g lean lamb leg steaks, visible fat removed, cut into small bite-size chunks

4 large sprigs fresh thyme, leaves picked

300ml chicken stock

Low-calorie cooking spray

1 large red onion, halved and sliced

2 garlic cloves, crushed

½ large red cabbage, thinly sliced

1 tbsp red wine vinegar

200g thin-stemmed broccoli, sliced lengthways, to serve

Method:

1 Preheat your oven to 160°C/fan 140°C/gas 3. Layer a third of the potatoes between the bases of 4 individual hotpot dishes. Cover with half the onions, half the lamb and a quarter of the thyme leaves, and season. Repeat the layers once more, then divide over the stock. Overlap the remaining potatoes on top and spray with low-calorie cooking spray.

2 Cover with lids or with foil and bake for 2 hours. Remove from the oven and increase the temperature to 220°C/fan 200°C/gas 7. Remove the lids or foil, spray the potatoes with a little more low-calorie cooking spray, then return to the oven for a further 15-20 minutes, or until the potatoes are crisp and golden.

3 Meanwhile, spray a large, non-stick saucepan with low-calorie cooking spray and place over a low heat. Add the red onion, garlic, remaining thyme leaves and 2 tbsp water, then cover and cook for 10 minutes until soft. Uncover, stir in the red cabbage and 3 tbsp water, then re-cover and cook for a further 10 minutes.

4 Uncover, increase the temperature to medium, then add the vinegar and cook for 3-4 minutes, or until all the liquid has been absorbed and the cabbage is tender but with a bit of crunch. While the cabbage is cooking, boil the broccoli for 5-6 minutes, or until tender, then drain. Season the veg and serve with the hotpots and a twist of freshly ground black pepper.
