100g pearl barley

700g lean lamb leg steaks, visible fat removed, cut into large chunks

2 leeks, thickly sliced

400g baby onions, peeled

400g Chantenay carrots, trimmed

12 button mushrooms

3 garlic cloves, thinly sliced

1 tsp black peppercorns

1 cinnamon stick

2 bay leaves

1 level tbsp cornflour mixed with 1 tbsp cold water

4 medium potatoes, peeled and cut into 2cm chunks

1.2 litres hot chicken stock

4 tbsp finely chopped fresh flat-leaf parsley

1 Set your slow cooker to low and add all the ingredients, except the parsley. Mix well and cover.

2 Cook for 7-8 hours, or until the lamb is meltingly tender and the stew has thickened. About 30 minutes before the end of cooking, stir in 2 tbsp parsley.

3 Divide the stew between 4 bowls, discarding the cinnamon stick and bay leaves, and scatter over the remaining parsley to serve.
