Low-calorie cooking spray
1 onion, finely sliced
3 celery sticks, chopped
300g carrots, roughly chopped
2 garlic cloves, crushed
2 x 400g cans chopped tomatoes
2 x 400g cans butter beans, drained and rinsed
1 tbsp balsamic vinegar
500ml chicken stock
200g cooked skinless turkey meat, roughly shredded
100g spring greens, shredded
Fresh basil leaves, to serve
1 Place a large, deep, non-stick frying pan over a medium heat and spray with low-calorie cooking spray. Add the onion, celery and carrots, and cook for 8-10 minutes, stirring frequently, until slightly softened.
2 Add the garlic with a splash of water and cook until fragrant. Add the tomatoes, butter beans, balsamic and stock. Bring to a gentle simmer and cook for 25 minutes until the mixture has reduced slightly.
3 Stir in the turkey and spring greens, and cook for a further 3-4 minutes until piping hot. Season to taste, then divide between 4 bowls. Add a twist of black pepper and scatter over the basil to serve.
