SW recipe: Jerk prawns with coconut rice

Ingredients:

300g dried long-grain rice
200ml reduced-fat coconut milk
400g peeled and cooked king or tiger prawns, thawed if frozen
1 tbsp jerk seasoning*
400g Swiss chard (or spinach)
Low-calorie cooking spray
*Spice blends are Free so long as they’re made from herbs and spices only and don’t include any Synned ingredients like sugar, flour or oil. Check the label to be sure and count the Syns as necessary.

Method:

Put the rice, coconut milk, 400ml boiling water and ½ tsp salt in a medium-size saucepan over a high heat. Bring to the boil and stir once, then cover, reduce the heat to low and cook for 15 minutes. Turn off the heat and leave to stand for 5 minutes, without lifting the lid.
Meanwhile, put the prawns in a bowl with the jerk seasoning and a pinch of salt. Toss well.
If you’re using Swiss chard, remove the leaves from the stalks. Cut the stalks into chunks and roughly chop the leaves.
While the rice is resting, spray a large non-stick frying pan with low-calorie cooking spray and place over a high heat. Add the chard stalks and stir-fry for 2 minutes. Add the prawns and chard leaves or spinach and stir-fry for 1-2 minutes or until the leaves have wilted. Fluff up the coconut rice with a fork, add to the prawns and toss well to serve.
