SW recipe: Jumbo prawns with pineapple salsa and pinto bean quinoa

Ingredients

450g raw peeled jumbo king prawns, split down the back

For the quinoa:

Low-calorie cooking spray

1 onion, finely chopped

2 yellow peppers, deseeded and finely diced

2 courgettes, finely diced

150g dried black quinoa (see Cook’s note)

500ml chicken stock

400g can pinto beans, drained and rinsed

30g fresh coriander, leaves roughly chopped

 

For the salsa:

250g fresh pineapple, sliced into matchsticks or small chunks

1 green chilli, finely chopped (deseeded if you like)

15g fresh mint, leaves finely chopped

Juice of 1 lime

Method

1 To make the quinoa, spray a large, deep, lidded, non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Add the onion and peppers, season and fry for 5-6 minutes until softened but not coloured. Add the courgettes and fry for 2 minutes, then add the quinoa and stock, and bring to a simmer. Reduce the heat to medium-low, cover and cook for 15 minutes.

2 Remove the lid, stir through the pinto beans and cook for a further 10 minutes, uncovered, or until the liquid has evaporated and the quinoa is tender but still has a bite. Cover and keep warm until ready to serve.

3 To make the salsa, mix together all the ingredients and set aside. Spray a large, non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Fry the prawns for 1-2 minutes on each side, or until they are pink and cooked through. Stir the coriander through the quinoa, then divide between 4 bowls. Top with the prawns and the pineapple salsa to serve.

COOK’S NOTE
Black quinoa is available in larger supermarkets and health food stores. It has a delicious crunchy texture and a nutty flavour, and looks very dramatic next to the prawns and pineapple. If you can’t find it, use dried white quinoa instead – the cooking instructions are the same
