400g dried linguine
200g sugar snap peas, halved lengthways
200g green beans, trimmed and cut into short lengths
Low-calorie cooking spray
3 garlic cloves, finely chopped
100g curly kale, stems discarded, roughly chopped
150ml vegetable stock
150g plain quark
120g fresh Parmesan, or vegetarian alternative, finely grated
Juice of ½ lemon
1 red chilli, deseeded and finely chopped
Cook the linguine according to the packet instructions, adding the sugar snap peas and green beans for the last 3-4 minutes of cooking time.
Meanwhile, spray a pan with low-calorie cooking spray and cook the garlic over a low heat for 2-3 minutes. Add the kale and stock and turn the heat up to medium. Cover and cook for 2-3 minutes, or until the kale starts to wilt. Transfer to a food processor with the quark, Parmesan and lemon juice. Season well and whizz until smooth.
Drain the pasta and veg and return to the pan. Add the kale pesto and chilli and toss well. Transfer to a large serving dish and serve immediately.
