SW recipe: kedgeree risotto

Serves 4 Ready in about 40 minutes

Ingredients:

6 medium eggs at room temperature

500g skinless and boneless smoked haddock fillets

1 vegetable stock cube

1 medium cauliflower, broken into small florets

2 onions. chopped

2 garlic cloves, crushed

7 tbsp mild curry powder

2 tsp turmeric

2 tsp ground coriander

2 tsp cumin seeds

250g dried risotto rice

1 red pepper, deseeded and finely diced

Zest and juke of 1 unwaxed lemon

1/2 small pack fresh flat-leaf parsley, finely chopped, to serve

Method:

1 Boil the eggs for 6 minutes, then lift into cold water. Put the haddock into a bowl and pour over 1,2 litres boiling water, set aside for 8-10 minutes, or until cooked through. Transfer the haddock, to plate using a fish slice. Tip the water into a saucepan with the  stock cube, then place over a low heat, without simmering to keep it hot.

2 Pulse the cauliflower in a food processor until it resembles rice and peel the eggs. Place a large, non stick frying pan over a medium heat. Add the onions and garlic with a splash of wale, and simmer until the water has almost evaporated and the onions are soft. Stir in the curry powder, turmeric. coriander and cumin seeds. Cook for 1 minute, then stir in the risotto rice

3 Stir in one third of the hot stock and simmer until the stock has been absorbed. stirring occasionally Repeat with the next third of the stock. Pour in the last of the stock add the cauliflower rice and stir constantly until the risotto rice is cooked and creamy (you can add a little more stock or water, if necessary). Add the pepper and lemon zest and juice, and season to taste.

4 Flake the haddock into large chunks and gently fold through the kedgeree to reheat. Divide between 4 bowls, top each with 3 egg halved and scatter veer the parsley to serve.
