SW recipe: Keema curry pie

Serves 4
Ready in about 1 hour 10 minutes

Ingredients:

1 onion, quartered

2 garlic cloves

1 tsp roughly chopped fresh root ginger

Low-calorie cooking spray

250g lean beef mince (5% fat or less)

250g lean turkey breast mince (5% fat or less)

2 tbsp medium curry powder

1 beef stock cube

400g can chopped tomatoes

Salt and freshly ground black pepper

200g frozen peas

Your favourite steamed veg, to serve

For the mash:

1kg floury potatoes, such as Desiree or King Edward, peeled and cut into chunks

1/4 tsp turmeric

125g Total 0% Fat Greek yogurt, plus extra to serve

Method:

1 Whizz the onion, garlic and ginger in a food processor to make a paste.

2 Spray a deep frying pan with low-calorie cooking spray and place over a medium-high heat. Brown the beef mince and remove from the pan,
then brown the turkey mince and remove from the pan, too. Fry the onion paste until it becomes fragrant. Stir in the curry powder and cook for 1 minute.

3 Crumble over the stock cube, return all the mince to the pan, and add the tomatoes plus a canful of water. Simmer for 15-20 minutes, season and stir in the peas.

4 Meanwhile to make the mash, boil the potatoes with the turmeric for 8-12 minutes, or until tender. Drain well, leave to steam-dry in the pan for a few minutes, then mash in the yogurt and season. Preheat your oven to 220°C/fan 200°C/gas 7. 5 Tip the mince into 4 individual ovenproof dishes and top with mash. Spray with low-calorie cooking spray. 6 Bake for 30-35 minutes, or until golden. Serve with the extra yogurt and the steamed vegetables.
