1 lean lamb steak, all visible fat removed cut into bite size chunks
½ green pepper
1 garlic clove
1½ tsp medium curry powder
large handful of spinach
100g cherry tomatoes
1 tbsp fat-free natural Greek-style yogurt
Fry the cubed lamb on a high heat for a few minutes on each side until browned and then remove from the pan.
Reduce the heat, add the pepper and onion and fry until softened. Add splash of water if it starts to stick.
Add the garlic, curry powder and passata. Stir in the lamb, cover and simmer for 10-15 minutes.
Stir in the spinach and cherry tomatoes and cook until the spinach has wilted and the tomatoes are warm. Remove from the heat and add in the yogurt just before serving.
