Serves 4 Ready in about 45 minutes
400g lean lamb steaks, visible fat removed, cut into chunks
6 tsp garam masala
1 tbsp cumin seeds
Frylight 2 onions, 1 quartered, 1 chopped
2 garlic cloves
Thumb-size piece fresh root ginger, peeled and roughly chopped
1 red chilli
3 peppers (mix of red and yellow), deseeded and cut into chunks
400g can chopped tomatoes
150g cherry tomatoes
200g dried basmati rice
1/2 cucumber, diced
Small pack fresh coriander, roughly chopped, stalks discarded
Juice of 2 limes, plus wedges to serve
Fat-free natural yogurt, to serve
1 Put the lamb in a bowl. Sprinkle over 2 tsp garam masala and 1 tsp cumin seeds, season and toss to coat. Spray a non-stick frying pan with Frylight and place over a medium-high heat. Brown the lamb, then set aside until needed.
2 Put the quartered onion in a food processor with the garlic, ginger, chilli, remaining garam masala and 100m1 water. Whizz into a paste.
3 Spray a non-stick frying pan with Frylight and place over a medium-high heat. Fry the chopped onion for a few minutes, then stir in the paste and fry for 2-3 minutes. Stir in the peppers, chopped tomatoes and a can of water and simmer for 10 minutes. Stir in the cherry tomatoes and lamb and simmer for a further 10 minutes, or until the lamb is cooked through and the sauce has reduced.
4 Meanwhile, cook the basmati rice according to the pack instructions, then drain. Mix together the diced cucumber, coriander, lime juice and remaining cumin seeds. Serve the curry with the rice and cucumber salad, and the yogurt and lime wedges on the side.
