SW recipe: Lamb kebab with couscous & garlic sauce

Spinach scramble: cook 2 or 3 lightly beaten eggs with a handful of baby spinach and quartered cherry tomatoes. Serve over 2 slices wholemeal toast from a small 400g loaf (a Healthy Extra)

Fill-you-up prawn noodles: toss together cooked dried flat rice noodles, chopped cucumber and peppers, halved cherry tomatoes and cooked peeled prawns. Serve drizzled with soy sauce

Lamb kebab with couscous & garlic sauce

Serves 4
Ready in about 40 minutes
Syns per serving: FREE


1 tsp chilli powder

4 garlic cloves, crushed to a paste

Juice of 3 lemons

750g lean lamb leg steaks, visible fat removed

140g plain dried couscous

1 iceberg lettuce, shredded

8 tomatoes, roughly chopped

2 red onions, sliced

1 large cucumber, halved lengthways and cut into chunks

200g fat-free natural Greek-style yogurt

Low-calorie cooking spray


1 Preheat your oven to 200°C/fan 180°C/gas 6. Mix together the chilli powder, half the garlic and the juice of 1 lemon. Rub all over the lamb and leave to marinate while you make the couscous, salad and garlic sauce.

2 Cook the couscous according to the pack instructions (without butter or oil). Toss together the lettuce, tomatoes, onions and cucumber and dress with the remaining lemon juice. For the garlic sauce, mix together the yogurt and remaining garlic and season to taste.

3 Spray a non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Cook the lamb for 2 minutes on each side, then transfer to a non-stick baking tray and finish off in the oven for 12-15 minutes. Leave to rest for 5 minutes.

4 Divide the couscous and salad between 4 plates. Slice the lamb and serve on top of the salad, drizzled with the garlic sauce and topped with a twist of black pepper.
