Low-calorie cooking spray
600g lean lamb leg steaks, thinly sliced
1 onion, sliced into thin wedges
200g shiitake mushrooms, sliced
100g sugar snap peas, halved diagonally
200g thin-stemmed broccoli, thinly sliced
200g pak choi, roughly chopped
3 tbsp oyster sauce
2 tbsp dark soy sauce
100ml hot vegetable stock
Bunch of spring onions, thickly sliced diagonally
225g can water chestnuts, drained and sliced
20g fresh bean sprouts, rinsed
Cooked dried noodles or rice, to serve
1 Spray a large, non-stick wok or frying pan with low-calorie cooking spray and place over a medium-high heat. Add the lamb and stir-fry for 4-5 minutes, or until lightly browned.
2 Add the onion, mushrooms, sugar snap peas, broccoli and pak choi and stir-fry for 5 minutes.
3 Add all the remaining ingredients, except the noodles or rice, and stir-fry for 3-4 minutes. Serve with the noodles or rice.
