SW recipe: Lamb with White Bean Salad

Serves 4, ready in 35 minutes, plus marinating


• 5 garlic cloves, crushed

• 8 tomatoes, chopped

• 150ml red wine vinegar

• 1 rosemary sprig

• A few thyme sprigs

• 8 lean lamb leg steaks, all visible fat removed

• Low-calorie cooking spray

• 1 small onion, chopped

• 1 celery stick, chopped

• 2 tbsp fresh oregano

• 400g can cannellini beans, drained and rinsed

• 400g can butter beans, drained and rinsed

• A small handful of chopped fresh parsley

• 100ml fat-free vinaigrette

• Finely grated zest and juice of ½ unwaxed lemon


1 Put three garlic cloves, two tomatoes, the vinegar and some seasoning into a food processor. Pick off the rosemary and thyme leaves, add to the food processor and whizz to a purée. Lay the lamb in a single layer in a non-metallic dish and pour over the marinade.

2 Cover and leave in a cool place or the fridge for at least 2 hours.

3 To make the bean salad, spray a non-stick pan with low-calorie cooking spray and place over a low heat. Add the onion and celery and cook for 4-5 minutes or until slightly softened.

4 Add the remaining garlic and cook for 1 minute then remove from the heat and stir in the oregano and beans. Stir in the remaining tomatoes and most of the parsley and set aside to cool.

5 Put the vinaigrette, lemon juice and most of the lemon zest into a bowl and whisk well. Take the steaks out of the marinade and shake off any excess (discard any marinade left over).

6 Cook in a hot griddle pan, turning once, until done to your liking (4-5 minutes for rare, 8 minutes for medium and 9-10 minutes for well done). Toss the dressing into the beans and spoon on to a large serving platter. Top with the steaks, scatter over the remaining parsley and lemon zest and serve hot.
