SW recipe: Leek and herb salmon parcels

Serves 4
Ready in 45 minutes


Low-calorie cooking spray

2 medium leeks, cut into thin matchsticks

4 skinless and boneless salmon fillets

180ml hot chicken stock

1 tbsp capers, drained

Large handful fresh dill, chopped

500g baby new potatoes, halved

500g thin-stemmed broccoli, sliced lengthways


1 Preheat your oven to 200°C/fan 180°C/gas 6. Cut off 4 pieces of baking paper, each about 40cm long, and lightly spray with low-calorie cooking spray.

2 Spray a large, non-stick frying pan with low-calorie cooking spray and place over a medium heat. Fry the leeks for 6-8 minutes, or until softened, and season.

3 Divide half the leeks between the centres of the baking paper sheets and top with the salmon fillets. Spoon 3 tbsp stock over each fillet, then top with the remaining leeks and scatter over the capers and dill. Fold the paper to enclose the contents, then double-fold the edges together to seal. Transfer to a baking tray and bake for 15 minutes, or until the salmon is cooked through.

4 Meanwhile, boil the potatoes for 15 minutes, or until tender, adding the broccoli for the last 2 minutes of cooking time, then drain. Unwrap the parcels and transfer the contents to 4 plates. Serve with the potatoes and broccoli, and season with a twist of freshly ground black pepper.
