SW recipe: Leek & macaroni cheese

Ready in about 40 minutes


6 leeks, trimmed and very thinly sliced
2 garlic cloves, finely chopped or crushed
300ml vegetable stock
300g dried macaroni
6 tbsp tomato purée
400g quark
1 tsp mustard powder
2 eggs, lightly beaten
160g reduced-fat Cheddar, coarsely grated
Salt and freshly ground black pepper

For the salad:

Cucumber and carrots, cut into thin ribbons
Mixed salad leaves
5 tbsp fat-free vinaigrette


1 Preheat your oven to 200°C/fan 180°C/gas 6. Place the leeks, garlic and stock in a pan. Bring to the boil, then simmer gently for 6-8 minutes, or until the leeks have softened. Transfer to a wide mixing bowl.

2 Cook the macaroni according to the packet instructions. Drain well and add to the leek mixture.

3 Mix the tomato purée, quark, mustard powder, eggs and 1 tsp water until smooth and add to the macaroni mixture. Stir in 120g of the Cheddar, season and toss well to combine. Transfer to a shallow, medium ovenproof dish.

4 Sprinkle over the remaining cheese and bake for 15-20 minutes, or until bubbling and lightly golden. Leave to stand for 5 minutes. Toss all the salad ingredients in a serving bowl and serve with the macaroni cheese.
