1.5kg whole chicken
2 lemons, 1 left whole, 1 cut into wedges to serve
4 large baking potatoes, peeled and cut into 3cm chunks
6 raw beetroot (around 500g), peeled and cut into 2cm cubes
1 fennel bulb, sliced into wedges
500g small carrots, trimmed
12 garlic cloves, separated and left unpeeled
6 sprigs of fresh rosemary, leaves finely chopped
Low-calorie cooking spray
400g spring greens, shredded
350ml Slimming World Roasted Onion Gravy, to serve
1 Preheat your oven to 200°C/fan 180°C/gas 6. Put the chicken in a shallow, non-stick roasting tin. Place the whole lemon inside the cavity and roast for 1 hour 15 minutes, or until cooked through and the juices run clear when you insert a skewer into the thickest part of the chicken.
2 Meanwhile, boil the potatoes for 8 minutes, then drain. Spread the potatoes, beetroot, fennel, carrots and garlic cloves on your largest non-stick baking tray (or 2 smaller trays) in a single layer. Scatter over the rosemary, then spray with low-calorie cooking spray and season. Once the chicken has been cooking for 20 minutes, add the veg to the oven below the chicken and bake for 1 hour 10 minutes until golden and cooked through, turning halfway.
3 Set the chicken aside to rest for 15 minutes (leaving the veg in the oven to continue cooking) and boil the spring greens for 1-2 minutes, then drain. Heat the gravy according to the pack instructions. Discard the skin from the chicken, then carve and divide between 4 plates with the potatoes and veg. Add a twist of black pepper, pour over the gravy and serve with the lemon wedges for squeezing over the veg.
