SW recipe: Lime and watermelon margaritas

Serves: 8
• Prep time: 15 minutes
• Ready in: Less than 30 Minutes
Toast to slimming success with this fresh and fruity Mexican cocktail – cheers!


• 800g watermelon flesh, seeded and roughly chopped, plus a few seeds, extra thin slices to decorate
• Juice of 1 lime
• 200ml tequila
• 50ml Cointreau or Triple Sec
• 2-3 tbsp sweetener
• A handful of ice cubes
• Salt, to serve
1. Chill eight martini glasses. Place all the ingredients, including the ice, in a blender or food processor and blend for about 1-2 minutes.
2. To serve, scatter a little salt on to a plate and dip the rim of each chilled glass into the margarita mixture (to a depth of about 5mm). Dip each glass in the salt to form a salted rim then fill with the margarita mixture. Decorate with a thin slice of watermelon and a few watermelon seeds.
