SW recipe: Mango & passion fruit cheesecake pots

Ready in 30 minutes, plus chilling

Ingredients

2 reduced-fat digestive biscuits
50g plain jumbo oats
1 large egg white
1 large mango, stoned, peeled and sliced
200g fat-free natural Greek-style yogurt
250g plain quark
Juice of 1 lime
1 level tbsp sweetener granules
12g sachet powdered gelatine
3 passion fruit, halved, and pulp and seeds scooped out

Method

1 Preheat your oven to 200°C/ fan 180°C/gas 6. Put the biscuits in a plastic food bag and bash with a rolling pin to make fine crumbs. Tip into a medium bowl with the oats and egg white, and mix well. Spread the mixture onto a non-stick baking tray and bake for 15 minutes until crunchy and golden. Set aside to cool.

2 Put the mango, yogurt, quark, lime juice and sweetener into a food processor. Whizz for 1-2 minutes until smooth, then leave in the processor. Put the gelatine in a measuring jug with 100ml boiling water and stir until dissolved. Add to the mango mixture and whizz until well combined.

3 Divide the mixture between 6 dessert glasses and chill for 2-3 hours until set. When ready to serve, top each cheesecake with the passion fruit seeds and pulp, then divide over the oat mixture.
