SW recipe: Meatballs with tagliatelle

Ingredients

500g lean beef mince (5% fat or less)

1 tsp fennel seeds, toasted and crushed

25g fresh flat-leaf parsley, leaves finely chopped

½ tsp dried red chilli flakes (optional)

2 large garlic cloves, crushed

Low-calorie cooking spray

1 red onion, finely chopped

2 x 400g cans chopped tomatoes

350g dried tagliatelle

25g fresh basil, leaves picked, reserving some to serve

Method

1 To make the meatballs, put the mince, fennel, parsley, chilli flakes (if using), and half the garlic in a large bowl, and season. Mix together using your hands until well combined, then shape into 12 balls. Chill while you make the sauce.

2 Spray a large, deep, lidded, non-stick frying pan with low-calorie cooking spray and place over a low-medium heat. Add the onion and cook for 5-6 minutes, stirring often, until softened. Add the remaining garlic with a splash of water and cook for 1-2 minutes.

3 Add the tomatoes and half a can of water. Gently simmer over a medium heat for 25 minutes until thickened, stirring occasionally. Season, then add the meatballs to the sauce and spoon some of the sauce over them. Bring to a gentle simmer, then cover and cook for 10 minutes, or until the meatballs are cooked through. Meanwhile, cook the tagliatelle according to the pack instructions, then drain.

4 Stir the basil through the tomato sauce. Divide the tagliatelle between 4 plates or bowls. Top with the meatballs and sauce, and scatter over the reserved basil leaves to serve.
