1 large aubergine, diced
1 large onion, roughly chopped
2 peppers, deseeded and roughly chopped
250g prepared pumpkin or squash, diced
2 garlic cloves, crushed
1 tbsp Free ras el hanout spice
low-calorie cooking spray
bag of baby spinach leaves
for the raita drizzle:
200g fat-free natural Greek yogurt (or vegan alternative)
1/4 cucumber, grated or finely chopped
2 tbsp chopped fresh mint, plus sprigs to serve
Preheat your oven to 200°C/fan 180°C/gas 6.
Put the aubergine, onion, peppers and pumpkin or squash in a non-stick baking tray. Sprinkle over the garlic and ras el hanout, spray with low-calorie cooking spray and toss well. Roast for 40 minutes or until tender.
Make the raita by putting the yogurt in a bowl and stirring in the cucumber and mint. Season to taste.
Divide the spinach leaves between plates, spoon the roasted vegetables on top and drizzle over the raita. Add a few mint leaves and serve straight away.
Chefs tip: Add a drained 400g can chickpeas for last 15 minutes of the cooking time.
