2 x 45g sheets ready-roiled filo pastry

150g reduced fat mozzarella, drained and roughly chopped
2 bottled roasted red peppers in brine, drained and roughly chopped
small handful of finely chopped fresh basil, plus small leaves to garnish
Preheat the oven to 180°C/Fan 160°C/Gas 4. Spray the pastry with low calorie cooking spray. Using a sharp knife, cut the pastry into 5cm x 5cm pieces. Spray a mini muffin tin with low calorie cooking spray and line 24 holes with a square of pastry. Spray with w calorie cooking spray and lay the rest of the pastry squares on top of the first ones at slightly different angles. Bake for 6-8 minutes or until brown, then transfer to a wire rack to cool.
Meanwhile, mix the mozzarella, peppers and basil in bowl.
Once the filo cups have cooled, fill with the mozzarella mixture and scatter over the basil leaves to serve.
