SERVES 2 READY IN ABOUT 1 HOUR
150g frozen spinach, defrosted and roughly chopped
250g fat-free natural cottage cheese
2 garlic cloves, finely chopped
1/4 tsp freshly grated nutmeg
50g button mushrooms, very finely chopped
1/2 onion, finely chopped
Salt and freshly ground black pepper
10 dried cannelloni tubes
500g passata with onions and garlic
60g Cheddar, grated
A rocket and tomato salad dressed with balsamic vinegar
1 Preheat your oven to 200°C/ fan 180°C/gas 6. Spray a 20 x 10cm baking dish with Frylight.
2 Put the spinach in a sieve and squeeze out as much liquid as you can, then transfer to a bowl. Add the cottage cheese, garlic, nutmeg, mushrooms and onion, season and stir. Spoon the mixture into the cannelloni tubes.
3 Pour half the passata into the baking dish, then arrange the cannelloni tubes on top in two layers. Pour over the remaining passata, then sprinkle over the Cheddar.
4 Cover with foil and bake for 15 minutes, then uncover and bake for a further 15-20 minutes, or until the pasta is tender. Serve with the salad on the side.

Use 3 garlic cloves and 1/4 tsp freshly grated nutmeg, and a 20 x 20cm baking dish (making sure the cannelloni still fits in a double layer). Double the remaining ingredients and follow the recipe as above.
