SW recipe: Okra and chickpea curry

Serves 4
Ready in 1 hour 10 minutes


  • 1 large potato, peeled and cut into small chunks
  • 1 large aubergine, cut into small chunks
  • 1 small cauliflower, cut into small florets
  • 350g okra, halved
  • 2 medium onions, chopped
  • 1 tbsp cumin seeds
  • 6 garlic cloves, 4 finely chopped and 2 crushed
  • 3cm piece of fresh root ginger, peeled and grated
  • 2 chillies (red or green), deseeded and finely chopped
  • 3 tbsp mild or medium curry powder, plus a pinch to serve
  • 400g can chickpeas
  • 2 tbsp tomato purée
  • 2 x 400g cans chopped tomatoes
  • 150g fat-free natural Greek yogurt
    Juice of 1 small lemon


Preheat your oven to 220°C/fan 200°C/gas 7.

Put the potato, aubergine, cauliflower, okra, onions, cumin seeds, ½ tsp salt and some pepper in a very large, non-stick deep-sided baking tray or roasting tin (about 40cm x 30cm). Add a few tbsp water, toss well, spread out in an even layer and roast for 20 minutes, tossing again and adding a splash more water halfway.

Remove the tray from the oven and add the chopped garlic, ginger, chillies and curry powder. Gently stir everything together and return to the oven for 5 minutes.

Meanwhile, drain the liquid from the chickpea can into a bowl and whisk in the tomato purée.

Remove the tray from the oven and add the chopped tomatoes, tomato purée mixture and chickpeas and stir well. Shake the tray to level the ingredients and return to the oven for 30 minutes or until the sauce has reduced and the vegetables are tender.

Meanwhile, stir the crushed garlic into the yogurt, add the lemon juice and salt to taste, and sprinkle with a pinch of curry powder. Remove the tray from the oven and serve with the garlic yogurt.
