SW recipe: ONE POT CHICKEN FAJITA PASTA

Ingredients:

350g penne
4 chicken fillets cut into thin strips
2 finely chopped onions
4 grated garlic cloves
1 red pepper and one yellow pepper chopped
3tbsp Schwartz fajita seasoning
Tiny pinch of cayenne pepper
juice of half a lime
1 teaspoon of sweetner or 20mls of diet coke
4 tbsp of tomato purée
1/4 tub of quark or fat free fromais frais
40g grated cheddar (hea)
salt and pepper
Fresh chopped coriander and lime to garnish
4.5 cups or 1.1 litre chicken stock
Frylite

Method:

1.Heat a pan and spray with frylite. Brown the chicken.
2. Add the onions and garlic and fry for 2 mins (add a little stock if sticking)
2. Add peppers
3. Add fajita seasoning, cayenne pepper, sweetner, lime juice
4. Add tomato purée and pasta, stock and season with salt and pepper.
Leave to simmer until pasta is cooked.
5. Mix through the quark and cheddar.
Garnish with some fresh coriander.

You can also snack on these to satisfy your hunger in between meals.

In addition, you are encouraged to eat measured quantities of certain foods, known as ‘Healthy Extras’ that provide nutrients essential for a healthy, balanced diet.

These include milk and cheese (for calcium) and cereals and wholemeal bread (for fibre and minerals).

And so you never feel deprived you can enjoy limited amounts of treats which are higher-calorie, less filling foods that include chocolate, crisps and alcohol.
