Low-calorie cooking spray
40 unpeeled garlic cloves
3 sliced leeks
4 peeled and sliced carrots
200g baby button mushrooms
4 halved and peeled echalion shallots
8 large skinless chicken thighs
300ml chicken stock
Finely chopped fresh tarragon leaves
Preheat your oven to 180°C/fan 160°C/gas 4. Spray a wide casserole dish with low-calorie cooking spray and place over a medium heat. Scatter in 20 unpeeled garlic cloves, 3 sliced leeks, 4 peeled and sliced carrots, 200g baby button mushrooms and 4 halved and peeled echalion shallots and stir.
Season 8 large skinless chicken thighs and place on top of the veg. Throw over 20 more unpeeled garlic cloves, then pour in 300ml chicken stock.
Bring to the boil, then cover and cook in the oven for 40 minutes, or until the chicken is cooked through.
Scatter over finely chopped fresh tarragon leaves and serve, either discarding the garlic or squeezing a few cloves from their skins (slow cooking will have left them sweet, soft and mild).
