SW recipe: One Pot Chicken with Couscous


2 tsp Turmeric
1 tbsp Mild Curry Powder
1/4 tsp Salt
4 Chicken Breast
Low Calorie Cooking Spray
2 Onion
3 Garlic Cloves
2 cm Root Ginger
500 ml Chicken Stock
1 Med Courgette
300g Vine Cherry Tomatoes
1 Plus Zest Lemon Juice
250g Raw Weight Couscous
Fresh Handful Coriander


Mix together half of the turmeric and half of the curry powder and all the salt together. Coat the chicken breasts with the mixed seasoning.

lightly spray your casserole dish with you low cal cooking spray. Pop it onto a high heat ( don’t leave it sitting on the heat long as i find the spray burn quite easily) pop in your chicken and brown off.

Once brown just remove the chicken and set to one side. Add garlic and ginger with the chopped onion into the dish brown for about ten minutes. Add in the remaining of your spices.

Mix in the chicken stock and courgette and also the tomatoes at this point. Bring to the boil.

Turn down the heat, place the chicken breasts into the pan. cover with a lid and simmer for approximately 30 minutes until your chicken is succulent and tender.

Take the chicken out of the dish and place to one side keeping it warm, take the dish off the heat.
