Ingredients:
1 Large Carrots
2 Large Onion
2 Medium Egg
1 tbsp Tomato Puree
1 tsp Turmeric
1 tsp Ground Cumin
1 tsp Coriander
1 tsp Mustard Powder
1 tsp Ground Ginger
1 tsp Garam Masala
0.5 tsp Garlic Salt
0.5 tsp Smoked Paprika
Method:
Preheat the oven to 200 (fan 180 gas 6) spray
Combine tomato puree and spices in a bowl to make a paste.
In a large bowl mix the grated carrots & thinly sliced onions, add the paste mix and combine well until coated.
Crack two medium eggs into a separate bowl and mix. Add the eggs to the onions & carrots and mix until well coated.
Spray a silicone muffin tray with low calorie spray and divide the mixture evenly. Place in the oven on 180 / 160 fan gas 4 for 20-30 minutes. To get a crunchy base turn 15-20 minutes in the top should be golden.
Allow to cool and enjoy.
