SW recipe: Paprika chicken with bean and tomato salad

Serves 4

Ready in 45 minutes, plus marinating


8 skinless and boneless chicken thighs, visible fat removed

3 garlic cloves, lightly bashed

2 tsp smoked paprika

¼ tsp dried red chilli flakes

Low-calorie cooking spray

1 red onion, finely sliced

1 lemon, juice of ½, remaining ½ cut into wedges to serve

400g can cannellini beans, drained and rinsed

600g large vine tomatoes, sliced

1 tsp dried oregano

120g rocket

1 tbsp balsamic vinegar


1 Put the chicken in a glass or stainless-steel bowl with the garlic, paprika and chilli flakes. Spray with low-calorie cooking spray and toss until the chicken is well coated. Cover and leave to marinate in the fridge for at least 1 hour or overnight.

2 For the salad, put the onion in a large bowl and add the lemon juice. Sprinkle over a pinch of salt and set aside for 10 minutes to pickle slightly.

3 Meanwhile, preheat your barbecue until the coals are white-hot, or preheat your grill to high. Cook the chicken thighs for 6-8 minutes on each side, or until cooked through and the juices run clear. Set aside to rest while you assemble the salad.

4 Drain the onion, then add the beans, tomatoes, oregano and rocket. Add the balsamic and stir to combine. Season and serve with the chicken and lemon wedges for squeezing over.
