SW recipe: Pasticcio

serves 4 / ready in 1 hour


low calorie cooking spray

1 large onion, roughly chopped

3 garlic cloves, crushed

1/2 tsp dried chilli flakes

1/2 tsp ground cinnamon

1 large carrot, peeled and finely grated

500g extra-lean minced beef

2 x 400g cans chopped tomatoes

200g passata

1 tsp sweetener salt and freshly ground black pepper

350g dried rigatoni pasta

for the white sauce:

2 level tsp cornflour

150ml skimmed milk

150ml vegetable stock

150g fat free natural fromage frais

1 level tsp Dijon mustard

small handful of finely chopped fresh parsley


Spray a large frying pan with low calorie cooking spray. Add the onion, garlic and chilli flakes and heat gently for 4 minutes until the onion is softened, stirring occasionally. Add the cinnamon, carrot and beef and stir-fry for 3-4 minutes until browned.

Add the canned tomatoes, passata and sweetener. Season and stir to combine. Bring to the boil, cover and simmer over a low heat for 25-30 minutes until thickened. Pour into a large ovenproof dish. Meanwhile, cook the pasta according to the packet instructions, then drain and set aside. Preheat the oven to 200°C/Fan 180°C/Gas 6.

Make the white sauce. Blend the cornflour with a little of the milk to make a smooth, thick paste. Stir in the remaining milk and the stock, pour into a saucepan and heat gently for 2-3 minutes until warmed and thickened.

Remove from the heat and stir in the fromage frais, mustard and parsley. Season to taste and stir into the pasta to coat evenly. Spread the pasta over the meat in the dish and bake for 20 minutes. Serve with your favourite Superfree vegetables.
