SW recipe: Patatas bravas & meatballs

Serves 1 Ready in about 30 minutes

Ingredients:

4 new potatoes, halved low-calorie cooking spray

5 frozen Slimming World Syn-free Beef and Pork Meatballs 1

onion, chopped

1 green pepper, deseeded and chopped into chunks

1 small garlic clove, finely chopped

1/2 tsp sweet smoked paprika

227g can chopped tomatoes

1 tbsp chopped fresh flat-leaf parsley

Green salad, to serve

Method:

1 Boil the potatoes for 15 minutes, or until tender. Meanwhile, spray a lidded, non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add the meatballs, onion and pepper and cook for 10 minutes, or until the veg has softened and the meatballs are browning (add a splash of water if things are sticking). Stir in the garlic and cook for a further 1.2 minutes.

2 Drain the potatoes and move everything in the frying pan over to one side. Spray the exposed side of the pan with a little more low-calorie cooking spray, then add the potatoes, squashing them down slightly. Cook for 1.2 minutes to crisp up a little, then mix in with the rest of the ingredients to combine.

3 Add the smoked paprika and tomatoes to the pan. Cover and cook for 5 minutes to thicken the sauce. Season, scatter with the parsley and serve with a green salad.

COOK’S NOTE To give the sauce some extra heat, add a pinch of chilli powder in step 3 with the sweet smoked paprika.
