SW recipe: Penne arrabbiata


  • 1 large courgette, thickly sliced
  • 2 large red peppers, deseeded and cut into large chunks
  • 1 large red onion, cut into large chunks
  • Low-calorie cooking spray
  • 150g cherry tomatoes, halved
  • 1 large onion, chopped
  • 3 large garlic cloves, crushed
  • 4 tbsp tomato purée
  • 400g can chopped tomatoes
  • ½-1 tsp dried chilli flakes, to taste
  • 1 tsp dried oregano
  • ½ tsp smoked paprika
  • ½ tsp ground cumin
  • 1 vegetable stock cube, crumbled
  • 400g dried penne pasta


  1. Preheat your oven to 220°C/fan 200°C/gas 7.
  2. Put the courgette, peppers and red onion in a large non-stick roasting tin, spray with low-calorie cooking spray and season lightly. Toss well and roast for 25 minutes, turning halfway and adding the cherry tomatoes 10 minutes before the end of the cooking time.
  3. Meanwhile, spray a large non-stick saucepan with low-calorie cooking spray and place over a medium heat. Add the chopped onion and cook for 5 minutes, adding a splash of water if needed. Stir in all the remaining ingredients except the pasta, add 350ml boiling water and simmer for 20 minutes. Season lightly to taste.
  4. At the same time, cook the pasta according to the pack instructions and drain.
  5. Stir the roasted vegetables and the sauce into the pasta and serve hot with salad.
