SW recipe: Pepper Pot Stew


Low cal cooking spray
400g stewing beef Diced
1 Small sweet potato Peeled and diced
200g Green beans Trimmed and halved
2 Red peppers Deseeded and cut into bite-sized piece
200ml Beef stock
200ml Passata with onions and garlic
2 Garlic cloves Finely chopped
2 tbsp Jerk seasoning
1 tbsp Red wine vinegar
2 tbsp Worcestershire sauce
Salt and freshly ground black pepper


Start with a big casserole pan, heated it up and sprayed a couple of squirts of the low cal spray. Add the beef, frying it for a a few minutes until browned all over.

Next add all the veg, along with the garlic, passata, Worcestershire sauce, jerk seasoning, stock and the wine vinegar. gave it a stir, seasoned, covered and moved to the back of the hob on a low heat. Leaving it to simmer for around an hour and a half !

Cook the rice according to the packet instructions, served and very much enjoyed!
