Low-calorie cooking spray
4 cardamom pods, lightly crushed
2 tsp cumin seeds
2 bay leaves
1 cinnamon stick
1 onion chopped
300g mixed mushrooms, sliced
2 garlic cloves, crushed
300g dried basmati rice
500ml vegetable stock
1 courgette, cut into small chunks
2 celery sticks, cut Into small chunks
200g butternut squash, peeled, deseeded and cut into small chunks
1 cucumber, deseeded and diced, to serve
3 tomatoes, diced, to serve
Juice of 1 lemon
Chopped fresh coriander, to serve
1 Spray a large, lidded, non-stick saucepan with low-calorie cooking spray and place over a medium heat. Add the cardamom, doves, cumin seeds, bay leaves and cinnamon stick. Cook for about 20 seconds, then add the onion. Stir-fry for 4-5 minutes, or until the onion is soft and browning at the edges.
2 Increase the heat to medium-high, add the mushrooms and garlic, and fry for 4-5 minutes. Add the rice, stock, courgette; celery and butternut squash. Bring to the boil, cover the pan and reduce the heat to very low. Cook for 10-12 minutes.
3 Remove the pan from the heat and set aside for 10-12 minutes. Mix together the cucumber, tomatoes and half the lemon juice. Stir the remaining lemon juice into the pilau and scatter over the coriander. Discard the cinnamon stick and bay leaves and serve with the cucumber salad.
