SW recipe: Pizza-topped chicken

EVERYDAY EASY
Serves 4

Ready in 1 hour

Ingredients:

Low-calorie cooking spray
1 small red onion, finely diced
1 red pepper, deseeded and chopped
1 garlic clove, crushed
400g can chopped tomatoes
2 tbsp tomato purée
1 tbsp dried oregano
4 skinless and boneless chicken breasts
2 x 150g tubes Primula Light Cheese
Fresh basil leaves, to serve
Mixed salad dressed with lemon juice, and home-made sweet potato fries baked in low-calorie cooking spray, to serve

Method:

1 Spray a non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add the onion and pepper, and fry for 8-10 minutes, stirring often, until softened. Add the garlic with a splash of water and fry for 2 minutes. Add the tomatoes, tomato purée and oregano, and stir well. Season, then bring to a simmer and cook for 8-10 minutes, stirring often, or until really thick. Set aside.

2 Preheat your grill on the highest setting. Using a small, sharp knife, carefully slice into one side of each chicken breast, starting at the thickest end and finishing at the thinnest. Slice almost all the way through, then open out each breast like a book.

3 Line your grill pan with foil and add the chicken in a single layer. Spray with low-calorie cooking spray and season. Grill for 10 minutes, turning halfway, or until cooked through and starting to brown on the edges. Divide the sauce over the chicken, leaving a small border around each edge. Squeeze half a tube of Primula Light Cheese over the top of each chicken breast.

4 Grill for 5-6 minutes, or until the cheese is bubbling and golden in places. Divide between 4 plates and scatter over the basil leaves. Serve with the dressed mixed salad and sweet potato fries.
