SW recipe: Pork and fennel Ragù

Makes 2 meals, each serving 4 Ready in about 1 hour 20 minutes


1kg lean pork mince (5% fat or less)

Low-calorie cooking spray

2 fennel bulbs, diced

2 carrots, peeled and diced

2 onions, finely chopped

4 garlic cloves, crushed

1 tsp dried red chilli flakes, crushed

2 tsp fennel seeds

300ml vegetable or chicken stock

3 x 400g cans chopped tomatoes

6 tbsp tomato purée

A pinch of sweetener

Grated zest of 1 unwaxed lemon

Salt and freshly ground black pepper

275g dried rigatoni Finely chopped

fresh flat-leaf parsley, to garnish


1 Place a large frying pan over a high heat and dry-fry half the mince for 5 minutes, stirring to break it up. Transfer to a casserole dish, repeat with the remaining mince, then wipe out the pan with kitchen paper.

2 Spray the frying pan with low-calorie cooking spray and reduce the heat to medium. Add the chopped fennel, carrots, onions and garlic and cook for 5 minutes. Stir in the chilli flakes and fennel seeds and cook for a further minute.

3 Add the stock, simmer for 2 minutes, then tip the mixture into the casserole dish along with the tomatoes, tomato puree, sweetener and lemon zest. Season, cover and bring to the boil. Reduce the heat and simmer for 45-50 minutes, until rich and slightly reduced.

4 Put half the raga in a freezer-proof container, leave to cool and freeze for another day. Cook the rigatoni according to the packet instructions, then drain. Serve the pasta and remaining ragu, garnished with the parsley and a twist of black pepper.
