Serves 4 Ready in about 1 hour 20 minutes
3 medium parsnips, peeled and cut into large chunks
4 large carrots, scrubbed and cut into large chunks
400g large new potatoes, such as Charlotte, cut into large chunks
Low-calorie cooking spray
3 large red onions, peeled and cut into wedges through the root
2 Cox apples, quartered, cored and cut into chunky wedges
8 pork loin steaks, visible fat removed
1 Preheat your oven to 220°C/ fan 200°C/gas 7. Boil the parsnips, carrots and potatoes for 7-8 minutes. then drain well.
2 Spray a large, non-stick roasting tin with low-calorie cooking spray. Scatter the boiled veg and red onions into the tin and spray with a little more low-calorie cooking spray. Season and roast for 30 minutes.
3 Add the apple wedges, and turn everything over. Season the pork, place on top of the veg and roast for a further 20-25 minutes, or until the vegetables and apples are tender and the pork is cooked through.
Divide everything between 4 plates, with a quarter of the apple wedges per person, and serve.
